In people suffering from Celiac disease, the ingestion of gluten causes an abnormal immune reaction in the small intestine. This reaction destroys not only the gluten, as if it would be dangerous for the body, but attacks the small intestine mucosa. Thus, despite a healthy diet, these people suffer from malnutrition. Celiac disease symptoms are not specific. Most often, those who suffer from gluten intolerance are affected by asthenia, fatigue, weight loss, loss of appetite, abdominal pain and bloating, nausea, vomiting, bone pain, edema, glossitis (inflammation of the tongue), hemorrhagic syndrome and anemia. While this list of symptoms can be scary and overwhelming, the good news is that a gluten free diet will completely reverse the effects of gluten in a celiac. Learning some easy gluten free recipes will enable you to make your own meals and enjoy your food again.
